Sustainability
We are aware that we have to leave the world a better place than we found it; therefore, we ensure that all our processes are as sustainable and efficient as possible.

We carry out a rotation of land, a technique known as fallowing, in which a plot of land is left uncultivated for one or several years.
The purpose of this system is to recover and store the organic material and moisture, seeking to replace the nutrients before using it again.
During this period work is carried out in the field in order to improve its qualities for cultivation.

The majority of our waste is organic and is offered to farmers in the area to feed their animals.
This action fulfils three different purposes:
- Preventing the waste from contaminating its surroundings and the energetic expense of recycling by other means.
- Providing food to livestock in a natural way, without chemical components.
- Contributing to the development of our surroundings supporting the local population.

We have a small purifier that purifies water and have sectored drains so that waste does not mix and so that processes are easier. Furthermore, drainage is carried out when water is used to prevent waste from decomposing.
We have three water cleaning points:
- Washing area: the waste that the water contains consists of potato branches and earth, classified by decanter boxes.
- Peeling area: the peel and water are separated by a filter.
- Cleaning of the facilities: water and oil residue which are separated through a hydrocarbon separator.
These three drains pass separately through our purifier which each day sends between 10 and 20,000 litres of clean water to the town purifier for reuse.

Thanks to a strict temperature control we prevent the oil from burning, which allows us to reuse it.
Each day we use 1,200 litres of oil which is renewed.
Our frying pans operate all day, and at night we use a tank to decant the oil. In the morning it is taken out clean, and waste is collected by a recycling company.

We work to optimise all production processes to the maximum, researching and developing specific machinery that adapts to our needs, in order to be increasingly efficient and sustainable.
In the fresh product storage room we have a two column ventilation system instead of a conventional air conditioning system, allowing us to save energy by 40 to 50%.
